Waffles and Omellet topped with glazed Honey Tomato Mango Salsa

For the waffles mix up all ingreidents both wet and dry and combine.

Heat your waffle press, open and pour batter. Make sure it covers the metal already greased. Cover and allow indicator to alert doneness. Take out and place in paper towel to keep warm.

For the salsa. Heat oil, sdd add carrots, fry a little. Add tomato and mango, and salt and honey. Check taste.

For the Omellet grease waffle press and when hot pour some of the already beaten eggs. Allow to cook. And repeat for the rest mixture.

Serve waffle, Omellet and salsa. Finish with spring onions and serve.

Though normal waffles are really fluffy and great for a snack, for breakfast they don't really make you full enough and I'd worry about the nutritional content. So these are the waffles I make for breakfast. I use honey in place of sugar, and olive oil for the oil. They've got a nice texture, are full of nutrients, and are very filling.Since I place the bowl on a scale and weigh out all the ingredients as I go along, I listed everything in grams.
