This was my grandmothers recipe for corn fritters. Always loved them fried up in a pan. Thought I might go a little healthier rout and turn them into a waffle. They taste just a great!

Ingredients

  1. 1 largeEgg
  2. 1/2 tspSalt
  3. 1/4 cupMilk
  4. 1 cupFlour
  5. 2 tspBaking Powder
  6. 2 tspMelted Butter
  7. 1/2 tspSugar
  8. 1 can15.25 oz Golden Sweet Whole Kernel Corn Drained

Cooking Instructions

    Plug in your waffle iron and let it pre heat while you are mixing the ingredients together.

    Open the can of corn and let it drain.

  3. 3

    Mix egg, salt, and milk together in a mixing bowl.

  4. 4

    Next add flour, baking powder, melted butter, sugar, to the egg mixture and stir to combine.

    With a long handled spoon add the corn and blend mixture well together. Let stand 5 minutes.

    Spray your waffle iron with non stick spray. I used a 1/3 measuring cup to portion out my batter into the waffle maker.

    Cook until golden crisp and then enjoy.

    I topped my corn fritter waffle off with butter, confectioner sugar, and pure maple syrup. I hope you enjoy this recipe!
