Rice and beans/dry fish stew

Ingredients

  1. 3 cupsrice,1 cup beans, tomato puree,veg.oil, spices, seasoning
  2. 2big dry fish,
  3. 1large mango,1 big fresh ginger,sugar to taste

Cooking Instructions

    Start by cooking the beans till soft.drain and set aside.parboil the rice and drain. Pour the rice into the pot and add water enough to cook it.add the beans and some salt. Cook till water absorbs completely.

    In a pot add some vegetable oil and the tomato puree(grinded or blended tomatoes, peppers and onions. Add the dry fish too.add some baking powder,stir and cook for about 45mins,stirring from time to time.add spices and seasonings (maggi,salt,curry,thyme and coriander powder). Cook till oil is visible on the top and water is fully absorbed. Serve with the rice.

    For the juice,wash the mango and cut into smaller pieces.add into a blender jar,add sugar and ginger and some water. Blend till smooth.sieve with some chilled water.pour into glasses and enjoy.
