Brad's potato parmesan crusted cod

Ingredients

2 servings
  1. 2 1/2 lbcod fillets
  2. 2 cupsinstant mashed potato flakes
  3. 1 cupdry grated parmesan
  4. 1 tsplemon pepper
  5. 1 tspMrs dash seasoning
  6. 1 tbsdried chopped chives
  7. 2LG eggs, beaten
  8. lemon juice
  9. to tastesalt

Cooking Instructions

45 mins
  1. 1

    Mix potato flakes, parmesan, and seasonings on a large plate.

    Double dip cod portions. First egg then crumbs, repeat. Place on a greased foil lined baking sheet

  3. 3

    Bake at 375 for 20-25 minutes. Remove and plate. Sprinkle with lemon juice and salt to taste.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
