Cheesy Parmesan Corn Meal Mush Cheesy Parmesan Corn Meal Mush
Corn meal mush is a very versatile dish that is popular primarily in the Southern United States. It works a lot like polenta in that it can be served fresh and soft, or it can be chilled, sliced, and fried. The main difference between "mush" and polenta is the corn meal used for mush is not as finely ground as that used for polenta, and in the US when corn meal Mush is served it's usually used as a breakfast food and sweetened. I like using it more as a savory side and this is what we have in this simple recipe. StephieCanCook -

Roast Corn Rice with Canned Corn Roast Corn Rice with Canned Corn
My mother makes steamed corn, and I always roast it with soy sauce. I really love that, but I wondered if it'd go with rice? I like flavored rice better than white rice. So I used a can of corn I had on hand, and added plenty of ginger to come up with this deep flavor. You don't even need a side dish!Fresh corn is in season in the summer. This is easy to make once you roast the corn - it's cheap and has a good texture. My husband had the idea of adding butter, which turned out to be delicious. Use lots of corn for a nice texture, and minced ginger for a better flavor. Helps to fight off the summer chills. Works as a main dish that doesn't need a side. California Farm Wasabi Horseradish Paste California Farm Wasabi Horseradish Paste
Horse radish roots and wasabi plants are the same plant family, and store bought wasabi paste is quite often spiced up green colored horse radish. You can make the real wasabi paste economically from vinegar and 100% pure dried wasabi powder.Home made wasabi paste stores well in the fridge in an airtight glass jar. Horse radish cream from dairy stays fresh for two weeks, or a few months if made with coconut cream. Wasabi cream sauce is made fresh, very economically, from young horse radish in fall with cream and wasabi powder. Keep pure wasabi powder in airtight container in freezer. Hobby Horseman -
Sweet Corn Soup Sweet Corn Soup
This is one of my absolute favorite ways to cook fresh sweet corn! It's so simple and really takes advantage of the corn's natural sweetness. Last summer I think almost of all of the corn I bought ended up being turned into this soup! If you use old corn or some that has dried out a little (wrinkly kernels), it won't turn out very good so I highly recommend using very fresh, in-season corn with plump kernels. Felice
