Imli ka Chatkhara chutney is easy to make and can be served with multiple snacks.The taste is divine and you will fail to stop your hands once you taste it.It is a perfect delight.
Cooking Instructions

Soak 250gm tamarind in ½ liter water for 2 hours. Then rub with hands and remove the seeds. Strain them.

In saucepan add the tamarind pulp, along with 1 tsp salt and 2 tsp red chili powder. Cook for 10 minutes. Then add 50gm jaggery.

When the jaggery starts to dissolve, pour the corn flour dissolved in water stirring continuously until the mixture thickens. Turn the flame off

In the end, add 2 tsp toasted cumin, ½ tsp toasted ginger powder and 1 tsp toasted carom seeds powder.

Delicious ‘imli ka chatkhara’ is ready to serve.

I obtained the original recipe from “ Lord Krishna’s Cuisine: The Art of Indian Vegetarian Cooking” by Yamuna Devi, my favorite recipe book. I substituted the grated coconut/almonds for walnuts as well as replaced the green chilies for red chilli flakes and let me tell you, this chutney was like nothing I ever had before. I was surprised to learn the balance of sweet and hot compliments the cilantro extremely well and it adds a subtle kick to it that keeps you coming back for more.
