Ingredients

  1. Meet Preparation
  2. 1.5medium onion
  3. 500 gmutton
  4. 2 tbsGinger garlic paste
  5. 4-5 cupwater
  6. 2.5 tspsalt
  7. Rice
  8. 2.5cup/600 gm rice
  9. 2 tbssalt
  10. 1/2pot water
  11. Stock
  12. 3 tbsShugar
  13. 2elaichi / 0.5 tsp elaichi powder
  14. Carrots and resins
  15. 1 cupJillian long carrots
  16. 1/4 cupblack rasins
  17. 2 tspshugar
  18. 2 tbsoil

Cooking Instructions

  1. 1

    ** Meet Preparation:

    Chopped 1 medium onion and fry till golden brown.
    Add mutton and ginger garlic paste and fry till it's color changes. Then add water and salt and wait till meet is tender or water is reduced to half. Add more water if required.

    Remove any foam from water while cooking.

    **Stock Preparation:

    Once water is reduced to half above. Separate the meet from water(stock) and cook the stock till it's reduced to 1.5 cup. Strain the stock and set aside.

    ** Part boil rice preparation:

    Soak rice for 20 minutes.

    Take half a pot water and wait for it to boil. Then add soaked rice. And 2 tbs salt.
    Wait for water to boil again. After that check if rice is part cook or not. Then put it aside

    ** Shugar mutton stock:

    Take 2-3 tbs Shugar and wait for it to melt and slight caramelize it. Then add stock over it. Add 2 elaichi or elaichi powder. Mix well and set aside.

    ** Preparation for Dum:

    Meet:
    Take 1/2 medium onion and try it till light brown. Take the boiled mutton you set aside and fry it for 4-5 mins. Set aside.

    Veggies:
    Jullian long cut carrots. Take 2 tbs oil, add the carrots and 2 tsp shugar and light fry it. Careful that carrots won't loose color. Also add 1/4 cup clean torrent and very light fry it. Put it aside.

    * Assembling:

    Take complete rice in a pot. Put stock all over the rice in a nice spread (you can also add 1/2 tsp elaichi powder and garam masala). Put fried mutton in the middle. And veggies on top. Close the lid properly with a cloth and put it on dum for 10 - 15 mins.

    Your rice is ready to serve. Now you can add almonds and other nuts on top to garnish it.
