Lychee much similar to Rambutans and Longan is a sweet fleshy and juicy Fruit full of essential nutrients, Vitamins and Minerals.
This refreshing drink is a must have in late Summer when the Season is nearly wrapping up. Lychee are abundantly available now at the start of Monsoon. Rainy Season has arrived with a bang but the Sun has still not spared us. It's too hot sometimes and this is the right thing to whip up. It's not only refreshing but also cool and peppy.
Everyone would love it. Not a single doubt about that. It's practically very easily done. There is not much prior preparations required. Just add, stir and enjoy.

Lychee needs to be removed by peeling it's soft colourful outer covering in which is embedded a sweet and a juicy White fruit full of awesome taste. Remove all and also deseed them as well. After done, add a few pieces to each serving glass.

Also add mint leaves, sugar or honey. Muddle softly until it's done. Also can add a slice of lemon.

Now add ice-cubes as needed. Top it up with chilled soda. Stir and it's perfectly done.

Serve it right away. Lychee is already very sweet. Hence sugar or honey can be adjusted accordingly. Enjoy!

Cool and Fresh
On a hot summer day me and my sister was thinking of whipping up a cold batch of margaritas. This was probably out of desperation since we were both evaporating from the heat. So I came up with this excellent concoction. I love how the mint leaves and the cucumber brings so much freshness to the drink and the pineapple gives that tangy sour note. The honey just gives it that slightly smoky and earthy sweetness. The smoothie just is like a sunny side beach resort in your mouth. So please try it and tell me what you think. Enjoy!

Thai ' Som tam' and Vietnamese 'Goi du du' are similar. In my opinion Goi du du is slightly milder. The mint makes this dish very refreshing too. Som tam has dried shrimp, but there are none in Goi du du.Palm sugar gives an authentic flavour to the sauce, but if it is not available, use sugar. If you are using fresh coriander and mint leaves, add them to the salad. If they are not available, add dried ones to the sauce. Just add a few leaves to enjoy the nice Asian flavours in this dish. Some added alcohol & some went virgin. Either way, it was not only appreciated, but was even requested after we arrived home today. This really is a crisp, refreshing drink!

I got the idea for this while listening to Shiina Ringo's "Mango and Papaya" and playing around with shiratama flour. I coupled it with ingredients that are good for the skin.Lychee berries are packed with antioxidants. White kikurage mushrooms make for a nice flower petal-like topping. Make sure to taper the hearts as much as possible. The springy texture will hold even after cooling if you knead in soy milk.
