Chicken Two Ways

I'm going to make chicken two different ways in this post. This chicken would be really good on the bbq but as the whether is not great here in the uk you have to come up with different ways of having your favourite foods. Personally I prefer the fried chicken as the grilled chicken loses some of its flavour, I would suggest marinating the chicken over night if you are going to do skewers. Also add a bit extra of the marinade ingredients.

Cooking Instructions
- 1
Prepare the chicken.
- 2
Mix all the marinade ingredients well.
- 3
Pour the marinade over the chicken, I didn't actually measure the ingredients so the above are just rough estimates but you can use your own measurements.
- 4
Mix the chicken with the marinade well.
- 5
Marinade for at least 3-4 hours in advance, preferably overnight. Cover and set in the fridge.
- 6
GRILLNG: When its time to cook, preheat the grill.
- 7
Soak you skewers.
- 8
Prepare your onion, then sprinkle some garlic salt over the onions.
- 9
Add one piece of chicken to the skewer then add a piece of onion. Continue this process until all 4 skewers are completed.
- 10
Transfer to the preheated grill and cook for 15-20 minutes or until cooked through. Turn the skewers once at half way point. Cook for longer if needed. I had to cook mine an extra 10-15 minutes as my grill is not working properly.
- 11
You should be left with about this much meat.
- 12
In a heavy based saucepan add the lard, butter and oil and bring to the heat.
- 13
Place a good amount of flour in a shallow dish.
- 14
Piece by piece coat the chicken in thr flour and add to the pan gently.
- 15
Fry the pieces for about 10-15 minutes or until ready.
- 16
When cooked place on a plate lined with kitchen towels to absorb any extra grease.
- 17
Try to cook the fried chicken last as the longer you leave it cooked the softer the batter will become.

Red Chicken Red Chicken
It's been a difficult year. However, I believe that we have plenty of reasons to be grateful. Every time I wake up, I am thankful because I am still alive. I am still given the chance to brighten someone's day. I can still fix some mistakes. Yes, it sounds sappy. I wake up each day with plenty of tasks in my head--like in an RPG game--and I am lucky if I can complete half of them. This pandemic has taught me not to be too hard on myself. I am managing this, I am surviving, and I can still help others. That's a blessing.Since the kids are studying at home, we have more family time. They have more time to cook. They cook for the whole family three times a week, sometimes more, when my partner and I can't do it. After years of teaching them how to cook, I am glad to notice that their dishes have become tastier. This is one of the dishes that they made.#givingthanks Angela Mertoyono -

One key to get success in making chicken wings just cook the chicken wings before you roasted. I've tried roasting the chicken wings only. And the result as not good as I cooked it first. amalia virshania -
Chicken and Waffles on a Stick Chicken and Waffles on a Stick
I heard this idea on the podcast The Sporkful and thought it would be fun to try. Chicken and waffles is classic comfort food and with this recipe you can have it on the go. The maple extract in the waffle mix adds a really nice hint of that sweet maple flavor so you don't have to drench you're portable chicken and waffles in syrup. Dripping maple syrup, while delicious, will slight reduce the portability. Try them with ketchup as well. It sounds weird, but believe me, give it a try. Note: I use bread flour for the chicken and AP flour for the waffle. This is because I had both on hand, if you only have AP flour, don't go out and get bread flour just for the chicken, AP will do just fine. Jon Valdez
