Ingredients

  1. 300 gramsdates
  2. 200 gramspeanuts
  3. 100 gramwhite chocolate (for vegan use biscoff spread)
  4. 2 tablespoonsroasted sesame seeds
  5. 20 gramschocolate
  6. Pistachios for garnishing

Cooking Instructions

    In a bowl add dates and soak them in boiling water. Set aside for 10 minutes.
    In a food processor add roasted peanuts and blitz them until its coarse in texture.
    Wash and remove pits from dates and add them to coarsely ground peanuts.

    Blitz it again until both incorporated. Remove in a bowl and knead in a dough. Make 4 equal parts and roll in long logs.
    Roll them in sesame seeds if preferred. Repeat for the rest of the rolls.
    Using a spatula or o rolling pin make indents and press to make a tunnel. Repeat for the rest.

    Melt white chocolate and fill the tunnel with it. Melt dark chocolate and put dots and swirl with a toothpick to make a pattern. Garnish with pistachios if preferred.
    Refrigerate for 5 to 7 minutes. Until the chocolate is set. Cut in small pieces and enjoy.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes.
