Ingredients

  1. 2 CUPSRolled Oats or Old Fashioned Oats (NOT the quick cook/instant kind)
  2. HALFCUP Self Raising Flour (OR HALF CUP All Purpose Flour + Quarter TSP Baking Powder)
  3. 1 CUPButtermilk
  4. 2 CUPSCarrots, Shredded (OR other dried fruit)
  5. 30 GRAMSSalted Butter OR about 2 TBSP
  6. 1 TSPCinnamon Powder
  7. 1Large Egg
  8. 1Banana, Very Ripe & Mushy
  9. 80 GRAMSSugar (OR approx 1 TBSP)
  10. 2 TBSPmilled Flaxseed (Ground)
  11. 1 TBSPChia Seeds
  12. 1 TBSPVanilla Essence
  13. Dark Chocolate, chopped
  14. OPTIONAL : Chopped Nuts, Dried Fruits, Raisins, Prune, etc. If using dried fruit, you may have to add few TBSP of milk to add moisture to batter

Cooking Instructions

    Mix the uncooked Rolled Oats, Flour and Milk in a mixing bowl. Mix well and keep refrigerated, covered, for at least an HOUR to hydrate the Oats.

    Note: All Purpose Flour & Baking Powder if you are not using Self Raising Flour.

    After an hour, mash the Banana until smooth in a separate bowl. Add in and mix all other ingredients. Combine the mixture with the refrigerated Oats, gently mix well.

    Refrigerate again for another 30 minutes to infuse all flavours.

    Texture should be a thick lump when scooped out like a slightly soft ice cream. IF watery, add a bit more flour or Chia seeds, it should absorb excess liquid, let it sit for awhile.

    Preheat oven to 200c, FAN on.

    Direct from chiller, scoop out cookie batter to a baking tray layered with wax paper to avoid sticking.

    Use a spoon to create round shapes of your desired size.

    Bake for 20 minutes or until golden brown.
    Bigger cookies will cook longer.

    Cool completely uncovered before storing in an air tight jar.

    NOTE :
    1. This recipe will not crisp up like a regular cookie because of very little sugar used.
    2. Because this recipe doesn't use preservatives and has fruits/veggies in it, it's best to eat within 3 days.

    SUBSTITUTIONS : Add more Banana to completely omit the sugar. If you do, you have to add 2-3 TBSP of flour per added banana to absorb moisture.
