Dates & Walnuts Cookies

Today I made these cookies to use up leftover Dates and Walnuts, which had been sitting in my pantry for a long time. I used my Basic Cookie Dough, but I reduced the amount of Flour as I wanted to add a lot of Walnuts and Dates. The cookies were really delicious and very sweet because I added a lot of Dates.

Ingredients

24 Cookies
  1. 125 gButter *softened
  2. 1/4 cupBrown Sugar
  3. 1/4 cupCaster Sugar
  4. 1Large Egg
  5. 1 teaspoonVanilla Extract
  6. 1& 1/2 cups Self-Rising Flour *OR 1 & 1/3 cups for flatter cookies
  7. 1 teaspoonGround Cinnamon
  8. 1/2 cupRoasted Walnuts *finely OR coarsely chopped
  9. 1 cupDried Pitted Dates *finely OR coarsely chopped

Cooking Instructions

    Preheat oven to 180℃. Line 2 baking trays with baking paper.

    Beat softened Butter and Sugars until smooth and well combined. Beat in Egg and Vanilla, and mix well. Add Flour and Cinnamon, mix well, then add Walnuts and Dates, and combine evenly.

    Roll the dough into 24 balls, about 3cm size, and place on the prepared trays, 12 balls each. You may wish to press down slightly.

    Bake for 15 to 20 minutes or until golden and cooked. Transfer to a wire rack to cool.
