Ingredients

1 cake
  1. 300 mlhot milk
  2. 250 gmedjool dates, pitted
  3. Wet Ingredients
  4. 150 mlany vegetable oil
  5. 2eggs
  6. 1 tspvanilla extract
  7. Dry Ingredients
  8. 150 gall-purpose flour
  9. 1/2 tspbaking soda
  10. 1/2 tspbaking powder
  11. 1/4 tspsalt

Cooking Instructions

    Soak the dates in hot milk for 1 hour.

    Preheat the oven to 180°C and grease/line a 22cm springform pan with parchment paper.

    In a food processor, blend the dates and milk until you reach a consistent texture.

    Add the wet ingredients and blend again until smooth.

  5. 5

    Transfer the mixture into a large bowl and add the dry ingredients, folding until just combined. Don’t over mix!

    Pour the batter into the springform pan and bake for 35-40 mins. You can check the doneness with a toothpick.

    Let the cake cool completely before serving. Enjoy!
