Whenever we cook yuca, we often have leftovers that end up being reheated or just fried. But there’s always another option—this one is quick and fun to make. Plus, the yuca and cheese combo is magical... everyone loves it. These also make great party snacks and you can serve them with garlic sauce.

In a bowl, combine the grated cooked yuca and grated cheese. Taste and adjust the salt if needed, then add the egg.

Meanwhile, heat enough oil in a pot or deep pan to fully cover the tequeños when frying.

Once the mixture is uniform, take a portion and shape it into croquettes resembling tequeños.

On a separate plate, place the flour. Roll each tequeño in the flour and set them on a rack until the oil is hot.

When the oil is very hot, fry 3-4 tequeños at a time so the oil doesn’t cool down. Fry until golden brown.

If the oil gets too hot, lower the heat slightly and continue frying the tequeños.
