1 cupcrushed pineapple with juice
1/2 cupshredded coconut
1/2 cupraisins
1/2 cupcrushed walnuts + some for decoration
1 cupapplesauce
4eggs
2 cupswhole wheat flour or 1 and 1 (To taste.)
3/4 cupbrown sugar
2 teaspoonsbaking powder
1 teaspoonsalt
1 teaspoonbaking soda
1 teaspooncinnamon
1 teaspoonvanilla
For the frosting and filling if you want to double it
8 ozcream cheese block
2 cupspowdered sugar
1/4 cupmargarine
Orange and green food coloring

Preheat the oven.

Mix sugar, eggs, and vanilla.

Sift dry ingredients.

Mix everything: pineapple, coconut, carrots, and applesauce. Once everything is combined, grease a 9x13 pan.

Bake for 45 minutes or until a toothpick comes out clean.

*To make the frosting**: the cream cheese and margarine should be at room temperature.

Once done, set aside a little for decoration, coloring a bit orange and green.

Let it cool completely before decorating.

Just like the frosting, it's better to let it chill for a few hours before using.
