Ingredients

50 minutes
Serves 8 servings
  • 2.2 lbscooked pinto beans with broth (about 1 kg)
  • Pork lard
  • 7 ozMexican-style sausage (longaniza) (about 200 grams)
  • 7 ozSpanish-style chorizo (about 200 grams)
  • 7 ozbacon (about 200 grams)
  • 4hot dogs, chopped
  • 7 ozpork cracklings (chicharrón seco) (about 200 grams)
  • 2smoked pork chops
  • 3-4large tomatoes, chopped
  • 2onions, chopped
  • Serrano peppers
  • 1garlic clove
  • 1 bunchcilantro
  • 1queso fresco (fresh Mexican cheese)

Steps

50 minutes
  1. 1

    Cook the beans with half an onion and a little salt, since the meats are already salty.

  2. 2

    Fry the bacon, longaniza, and smoked pork chops. Once browned, add the hot dogs, cook a little longer, and set aside.

  3. 3

    Heat the lard and sauté the onion and garlic. Once softened, add the chopped tomatoes and cilantro.

  4. 4

    In a large pot, combine the beans, the sautéed mixture, and the meats, except for the pork cracklings and peppers.

  5. 5

    Add the pork cracklings 10 minutes before turning off the heat. Serve with serrano peppers, queso fresco, extra chopped onion, and cilantro to taste.
