Mexican Charro Beans

Charro beans are made with ham, tomatoes, bacon, chorizo, and other ingredients that give the beans a rich, slightly spicy flavor. This is my mother's recipe—she's from Jalisco—and like all recipes, you can adjust the ingredients to your family's taste. Serve as a main dish or as a side with any Mexican meal.
Mexican Charro Beans
Charro beans are made with ham, tomatoes, bacon, chorizo, and other ingredients that give the beans a rich, slightly spicy flavor. Cook the beans with half an onion and a little salt, since the meats are already salty.

Fry the bacon, longaniza, and smoked pork chops. Once browned, add the hot dogs, cook a little longer, and set aside.

Heat the lard and sauté the onion and garlic. Once softened, add the chopped tomatoes and cilantro.

In a large pot, combine the beans, the sautéed mixture, and the meats, except for the pork cracklings and peppers.

Add the pork cracklings 10 minutes before turning off the heat. Serve with serrano peppers, queso fresco, extra chopped onion, and cilantro to taste.
