A simple platter that goes well with fresh peas from pod and a saffron aioli. No fuss and lovely mix of sweet and salty.

A simple platter that goes well with fresh peas from pod and a saffron aioli. No fuss and lovely mix of sweet and salty.
Steps

Heat ridged griddle to hot hot hot.

Score nectarines around middle then twist to release from stone.
- 3
Cut into wedges and lightly oil before placing on hot griddle pan.
- 4
Assemble plate by separating ham, crumbling feta and tearing mint.
- 5
Cook each surface until "bars" appear then remove and put aside to cool a little.
- 6
Add fruit to salad plate and drizzle with oil and season to taste. I used this pimento powder to add slighty heat.
