Cooking Instructions

In a bowl, combine the corn flour and gradually add the water, using about 3 1/4 cups.

Once the dough is kneaded, add the carnitas bits (these are the leftovers at the bottom of the pot after making pork carnitas) and knead to integrate.

Place a portion of dough in a tortilla press and flatten to the desired size. I made them large, about 5 inches. Place them on a preheated griddle to cook on both sides.

Remove them and, using a kitchen towel, pinch the edges to form a small rim like a shallow bowl.

Add hot beans, cheese, and your preferred salsa. I used habanero and faux guacamole, which are in my recipes.

I concocted my carnita recipe from a few other recipes. All ingredients can be adjusted to your taste. I usually put it in crockpot but I have been known to put in on the grill as well. Some recipes call for added fat but I feel the pork produces enough on it's own it's not needed.Stephanie

There are other recipes for carnitas, for example slow cooked in chicken broth. I found that the only way to get that authentic Mexican flavor is to use the manteca "lard". Also DO NOT use American style Coca-Cola, it doesn't have the raw sugar the Mexican Coca-Cola has. Hellbound78 -

My daughter sent me this recipe and it is great. Carnitas is the Mexican version of our pulled pork. This version uses some interesting spices and it cooks in the pork fat. Definitely worth a try. Makes for a great filling in tacos or fajitas but they can also be served with rice or potatoes. fenway
