Potato Fish Fry Masala

My kids love it when I make this Potato Fish Fry Masala (by the way; my son named it so, he loves fish fry, and these aloo look similar to those😉)

Since school times I always loved my Sindhi friend's lunch boxes with mouthwatering masaledar sabji fries, super soft fragrant parathas and tangy pickles. And also we used to leave in a Sindhi colony, so I have a strong Sindhi food connection.

One of my friend taught me this cool looking idea, by slicing the potatoes with apple cutter and stuffing masalas in gaps and then stir frying them. Which everyone in my family loves and I make these often, sometimes with gravy or sometimes dry.

Ingredients

7-10 minutes
5 servings
  • 3-4Long potatoes
  • 2-3garlic pods
  • 2 tablespoonscoriander powder
  • 2 teaspooncumin powder
  • 1 teaspoonsalt
  • 1 teaspoongaram masala
  • 1 teaspoonamchur powder
  • 1 teaspoonred chilli powder
  • 2 tablespoonsmustard oil or any oil
  • As requiredTomatoes and coriander leaves for garnish

Steps

7-10 minutes
  1. 1

    Wash and peel potatoes. Slice them in three, length wise.

  2. 2

    In a dish or a bowl add all the masalas; salt, red chilli powder, garam masala, turmeric, amchur powder, cumin & coriander powder, crushed garlic and mix well.

  3. 3

    Using an apple cutter, give a deep cut to all the slices. Carefully not cutting till end. We need a cut for filling masalas.

  4. 4

    Carefully rub the masalas in the gaps between cuts, without breaking them.

  5. 5

    Heat oil in a non stick pan. Add these potatoes into the pan. Be careful not to overlap as they will break while cooking.

  6. 6

    Cook from both sides till golden colour. Cover and cook.

  7. 7

    Keep checking and flipping the potatoes. Till soft when knife inserted in centre.

  8. 8

    Once potatoes are soft add the remaining Masala if any, and let it also get cooked a little.

  9. 9

    Enjoy these 'Potato Fish Fry Masala' as a party snacks or with chapati (perfect for school tiffin). They also taste devine with hot dalrice and papademos.
