Ingredients

  • For vegetable gold coins
  • 12bread slices
  • 1/2 cupmaida
  • 1 tbspsesame seeds for sprinkling
  • As requiredOil for deep frying
  • To be mixed together into a topping
  • 1 1/2 cupsboiled, peeled and mashed potatoes
  • 1/4 cupfinally chopped carrots
  • 1/2 cupfinally chopped onions
  • 1/4 cupfinally chopped bell peppers
  • 1/2 cupboiled and coarsely crushed sweet corn kernels
  • 2 tspfinally chopped green chilli
  • 1 tspfinally chopped ginger
  • 2 tspfinally chopped garlic
  • 1/2 tspsoya sauce
  • To tasteSalt

Steps

  1. 1

    To make vegetable gold coins, combine maida and approximately water in a bowl, mix well to make a thick paste. Keep aside.

  2. 2

    Cut the bread slices into roundels with the help of a cookie cutter

  3. 3

    Place bread roundels on a clean, dry surface, place approximately topping over each bread roundel and spread evenly.

  4. 4

    Pour a little maida water mixture evenly over it.

  5. 5

    Sprinkle sesame seeds over the Maida water mixture.

  6. 6

    Repeat the steps to make more gold coins.

  7. 7

    Heat oil in a deep non stick pan and deep fry gold coins till they turn golden brown in colour from both sides. Drain on absorbent paper.

  8. 8

    Serve the vegetable coins immediately with red chilli sauce or tomato ketchup.
