Banana Baked Oatmeal

I enjoy oats in every form, from sweet to savoury, from overnight to stove cooked and now baked oats have been hitting the spot for me lately. Even though it's mostly the same ingredients as regular oats, the baked texture makes them feel more hearty and delicious.
There are so many combinations and flavours for baked oats. You can throw in whatever fruit you love, like strawberry, blueberry, banana, mango, pineapple etc, add nut butter of your choice and use sweetner that you have in your pantry. Mix everything and bake it up baby. You can even bake it at night and keep ready for your busy mornings in advance. This breakfast has protein, complex carbs and good fats which will keep you fuller for longer.

Pre-heat oven to 190°C.

In a large bowl combine the oats, baking powder, salt, and cinnamon. Set aside.

In a medium bowl mash one banana with the back of your fork until you have a baby food-like consistency. Mix in egg whites, milk, jaggery and vanilla. Combine everything together and then pour wet ingredients into the dry ingredients and combine well.

Grease an 8x8 metal baking pan and line with one sliced banana. Pour the oat mixture over the bananas and then top with the other sliced banana and blueberries and then pop in the oven for 25 minutes or until golden brown and cooked through.

Cool and slice into four pieces. Enjoy!
