Ingredients

6 persons
  • 4 cupsparboiled rice
  • 1000 mlGround Fresh tomatoes= 1liter in blender
  • 50 mlGround Fresh peppers
  • 4 cupsBeef of chicken broth/stock
  • Spices (Curry,Thyme, Nutmeg, Chicken and mixed spice)
  • 1 tbspGinger, garlic paste
  • 3knorr cubes and salt to taste
  • 2 cupssliced onions
  • 300 mlvegetable or groundnut oil
  • Already prepared and refrigerated coleslaw

Steps

    In a clean pot pour in the oil,add the onion and the tomatoe&pepper paste,fry the Tomatoe until well fried.

  2. 2

    Once it is well fried, remove half and set aside. add the broth/stock to the remaining fried tomato in the pot, the ground ginger/garlic paste, a teaspoon each of curry and thyme,mix spices, the knorr cubes, 2 tsp of salt all the ingredients then add 1 cup of water,cover the pot to boil.

    Then add the parboiled rice,the fried tomatoes you initially removed, (I do this so my rice doesn’t start burning before it is properly cooked.

    Then just cook till the rice is soft for consumption,in medium-low flame,Remember that you can add water occasionally.

    Turn and serve with the fried meat of ur choice,fish,salad, coleslaw,etc.
