Pasta With Oil, Chilli & Garlic

This dish is so easy to make but packs in a lot of vibrant and fresh flavours. Perfect for a quick meal when you don't have a lot of time to cook, it only takes around 12 minutes to prepare.
Called 'spaghetti aglio, olio e peperoncino' in Italian this classic dish is traditionally made with spaghetti - but on this occasion I've used linguine instead. Both work really well, I think. I love to add anchovies and cook them down in the oil for extra flavour.

Bring a large saucepan of salted water to the boil and then begin cooking the pasta according to packet instructions.

Once the pasta has been cooking for five minutes add the olive oil and anchovy fillets plus the garlic to a large frying pan and begin to heat. Once the oil heats and the garlic begins to sizzle a little, add in the chopped chillies and allow to become fragrant. This should take around 15-20 seconds.

Add in half the chopped parsley and turn the heat down low on the hob. Fry the anchovies, chillies, garlic and parsley for a around 2 minutes or until the anchovies have broken right down.

Drain off the Spaghetti once cooked and al dente and reserve around 2 tbsp of the pasta water. Season it with a little salt & pepper. Add the Spaghetti and remaining parsley into the frying pan with the fragrant oil and toss everything gently together so all the strands of pasta are coated evenly in the golden oil and the ingredients are evenly distributed.

Dish up and grate over a little parmesan cheese. Enjoy! :)
