Stir-Fried Pork Leg with Southern Thai Curry Paste and Shrimp Paste
Cooking Instructions

Cut the pork leg meat into bite-sized pieces and halve the Parkia seeds. If you prefer whole seeds, no need to cut. Dissolve the shrimp paste in water and set aside.

Heat a little oil in a pan and stir-fry the curry paste until fragrant. Add the prepared pork leg meat.

When the pork is about 40% cooked, add the dissolved shrimp paste. Season with fish sauce, oyster sauce, a bit of seasoning powder, and a little sugar. Simmer on low heat for about 15 minutes. If it gets too dry, add a little water.

Once the sauce thickens, add the Parkia seeds and stir-fry until thick. Add the kaffir lime leaves and serve.
