(In this recipe I used purple cauliflower instead of white)

Cover the caulifower with hot water in a pot and boil for about 10 minutes

Heat the olive oil in a frying pan and fry the onions slowly for about 10 minutes. Add the the tomatoes and heat through for about 5 minutes.

Add the chopped tomato, stir in for about 5minutes. Then add the vegetable stock, salt, pepper, cumin, and paprika

When the cauliflower is cooked, cut it into smaller pieces and add them to the tomato mixture and add the cup of tomato paste juice. Stir for almost 3 minutes.

You can enjoy your plate with flatbread 😊
