Khandvi is a popular Gujarati dish of India.It is served as a snack or side dish.
Steps

Mix curd & water & make buttermilk.Grease a thali/plate on reverse side with oil.

In bowl mix gram flour,buttermilk,turmeric powder,ginger paste, green chilli paste & salt & mix well till no lumps remaining.

Transfer the mixture into a non stick pan & cook the mixture on slow flame till it becomes thick while continuously stirring.

Switch off the flame.Take little mixture & spread on the greased thali to a thin uniform layer.

When it's cool cut in to equal strips & rolls them gently.

Heat remaining oil in the pan & add mustard seeds.When seeds crackle add curry leaves, asafoetida & mix well.Pour over khandvi.

Garnish with grated coconut & curry leaves & serve.
