Ingredients

  1. For nylon khaman dhokla
  2. 1 cupchana dal flour(Bengal gram flour)
  3. 11/2 tbspsemolina/ rawa
  4. 3 tbspsugar
  5. 3 tspoil
  6. 1 tbsplemon juice or 1/2 tsp citric acid crystal
  7. to tasteSalt
  8. 3/4 cupwater
  9. 1 tbspeno salt
  10. For tempering
  11. 4 tbspoil
  12. 1/2 tspmustard seed
  13. 1 pinchasafoetida
  14. 1 tspwhite sesame seeds
  15. 6-8curry leaves
  16. 2 tbspgreen chillies ginger paste
  17. 1/2 cupgrated fresh coconut
  18. 1/2 cupfinely chopped coriander leaves
  19. 1 cupbesan sev
  20. As neededPomegranate kernels

Steps

  1. 1

    Mix chana dal flour & semolina in bowl,add & mix salt, sugar, lemon juice and oil. Pour water and make smooth mixture. On gas keep big vessel..in it pour enough water. In middle keep round ring stand for keeping tin on it. On the flame Grease square tin with oil. Place this grease tin on round ring stand

    In flour mixture add eno salt,and mix in one direction..the mixture will be double & fluffy. Pour this mixture immediately in grease tin.

    Cover the vessel with lid with thin cotton cloth tied to it. Steam dhokla for 12 mins on medium flame.

    Cool nylon khaman dhokla completely.

    Break the dhokla pieces... with hand into coarse mixture. In kadhai add heat oil, do tempering of mustard seed, sesame seeds,curry leaves, asafoetida, green chillies ginger paste..saute for 1 minute.

    Add prepared coarse khaman mixture. Mix well.

    At the time of serving add prepared Amiri Khaman in serving plate on it sprinkle besan sev, grated coconut and garnish with chopped fresh coriander leaves and pomegranate kernels. Serve immediately.

    Tip..if you to make garlic flavour..add garlic paste in batter at the time of making dhokla.
