Ginger, garlic and rosemary vegetables

Preheat oven to 180 degrees

Wash and cut the vegetables in equal sizes and shapes if possible.

In an under-lined oven tray, spread the chopped vegetables to a flat one layer, sprinkle with the salt, pepper, the fresh herbs and the vegetable oil. cover with foil again

Bake for 15 - 20 minutes then check for 'doneness', the potatoes should be soft when poked with a fork, remove from oven, allow to rest for 5 minutes

Serve, garnish and enjoy
