Wash potato thoroughly then grate the potatoes.

Add salt and keep aside for 5 mins
After 5 mins squeeze the potatoes so that excess water goes out. - 3
Now take grated potatoes in a bowl add salt, ginger paste, garlic paste, ajwain, cumin seeds, chilli powder and hing. Add chopped onions and mix well.

Then add the flours and mix thoroughly to make a tight mixture.

Keep oil in a wok for heating
Take small portions of potato mix and carefully put in oil for frying.
Keep the oil on low heat so that pakudis get fried nicely. - 6
Keep turning them so that they get cooked evenly.

Fry them till they are golden and crisp.

Serve with ketchup or chutney.
