Ingredients

6 portions
  1. Short crust ingrds : 60 -70 grams Buttr
  2. 1 cupPlain flour
  3. 1tspn Salt
  4. 1/2 cupwhinemeal flour
  5. 3 tablespoonsemolina flour
  6. 2-3 spoonsCold water
  7. Rice graind or baking beeds for blind baking
  8. Filling(custard) ingredient: 3 medium eggs.3/4 cup milk.1/4 wtr
  9. Other fillilng in.filling!! (To put in the custard)see 👇list
  10. Spices: 1 tspn salt. Half tspoon garlic.dried herbs.hlf tumric
  11. 2medium red onion
  12. 2 handfulsweetcorn(optional but adds texture and color)
  13. 1 handfulMixed peppers cubed
  14. 2 handfulPeas or choped green beans
  15. 2hndfl Chicken steaks pieces (briefly marin8d with ginger.salt)
  16. Other veg of choice frozen or fresh.choped

Steps

    Prep :set up your ingredients and tools you may need.these include all mentioned👍(in list above)

    Make the short crust dough:put the 3 types of flour in mixing bowl..then add butter by crumbling it with hands and fingr tips to resemble crumbs then add salt and very little water just to help put everything together...form a ballish shape.cover with cling film refrigerate briefly

    Meanwhile work with fillings.start with chicken.which you washed cubed and marinated..then chop the veggies and put aside

    Work on the short crust...so take the chilled dough out.lay big enof baking paper on your clean surface and put your dough ball then flaten top abit.layer another big enof baking paper and stzrt rolling with your rolling pin until very thin as you can do...(if its thick it will take ages to cook)

    Noe you can gently pic up the baking papers not to distriy your hard work though!then place in to fit your dish base and edges (see pic)edge has to be long enof to hold the filling as if you are moulding a dish for it.in the pic i havent added the top baking paper)

    Now add your raw rice grains to fill up the dish as much as possible to gain heavyness to weigh down the prepared dough...then blind bake in preheated oven medium heat (nb ;pic with base is just for illustration purpose..not how it was)

    Do about after 15 mins check....(until the dough is as if sandy..you can pinch a side a little and taste to check as well.)meanwhile prep the chicken and veggies by shallow frying the onions first then add chicken. Can Some spices such as chiliflakes here too

    Once you are happy with the crust.now you let the filling cool.while you prep the custard.you add eggs in a bowl whisk then add milk..i had forgoten to add spice at veg stage so i just aded in the custard mixture(reason for whats in the picture)its ok to do that as all will go in mixture later anyways..add in the custard and veg and chicken mixtures

    Then put back in oven and leave until custard is set..again 15 mins medium high heat.you can know one the custard is not moving when slighlty shake the dish.wear your gloves please when handling this...also a nice bubbling on top and nice color on surface and...alhamdulillah your queesh deesh is done...slice in triangular portions.share and bismillah enjoy..yes even with tea time!

    Mportant step ;checking how cooked it is.a method also is insert a skewer to come out very clean then yuv gottit!!where ever however whenever possible!!(pls not that in the pic hasnt brownd enof and custard was slightly so it need few more mins in oven)

food is a blessing from the almighty...if u lov food .try feeding ..while you can feed yourself still... or nurturing basically . mayb some advise wud b keep your resources resoursefulnes creativity talent and zest 4 good things n the right ways..in life...n safe and available in the right ways...so manage your recipes and ..i say this is one way of a system that allows 2 do that and mayb even more...right ?!?thnk.uu.remain blesed!!
