We call this the French salad in Slovenia for some reason. It's very common, and available in every supermarket here. This homemade one is much more flavourful though, especially with homemade mayonnaise.

Wash the potatoes, put them in cold water (unpeeled), bring to boil, and cook for 25 minutes.

Hard boil the eggs, and cool them down in cold water.

Dice the carrots into pea-sized cubes, and cook them together with the peas in salted water.

Make the mayonnaise - you can also use store-bought, but it's much better with homemade.

Strain the potatoes, and leave them to cool off a bit, not to long. Peel them as soon as you can hold them.

Dice the potatoes, the eggs and the gherkins into pea-sized cubes.

Put all the vegetables into a large bowl, add the mayonnaise and lemon juice, season with salt and pepper, and gently stir.

Serve chilled. You can store it in the fridge for up to a week.
