Bitter melon beef with black bean paste

Ingredients

4 servings
  1. 300 gbeef(slice thin)
  2. 1bitter melon
  3. 3 clovesgarlic (mince)
  4. 1chili (as u like)can skip
  5. 1 tbspblack bean paste
  6. Cooking oil
  7. Beef marinade:
  8. 1 tbspsoy sauce
  9. 1 tbspcooking oil
  10. 1 tspsugar
  11. 1 tspcooking wine
  12. 1/2 tbspdark soy sauce
  13. 2 tbspwater
  14. 1 tbspcorn starch
  15. Sauce thicken:
  16. 1 tbspoyster sauce
  17. 1 tbspsesame oil
  18. 1 tbspcorn starch
  19. 3 tbspwater

Cooking Instructions

    Marinade the beef for 30 minutes,set a side. In bowl mix thicken sauce for later use.

    Wash the bitter melon, cut it length wise down the middle

    Scrape the seeds out with a spoon

    Thinly slice the melon put some salt and set aside to remove bitter taste for 10 minute, Rinse the salt.

    Boil some water, when the water boiling put in melon to boil for 30second. Drain it put in cold water to prevent over cook

    Make hot wok,put some oil fry the beef until half cook take it,set a side.

    Fry garlic until fragrance then put in black bean paste,chili fry a while then put back melon and beef. Stir it until all ingredients mix, let it for 2minute. Then pour thicken sauce, fry it until sauce all mixed up. Taste it,off the fire ready to serve.
