Bhartas are the simplest and the ultimate comfort food of Bangladesh served with rice. Bengali Eggplant Chutney/ Being an ka bharta/ Brinjal Chutney is one of them.

The word Bharta (pronounced BHURR-taah) refers to dishes in which the ingredients are roughly mashed either before or after the dish is prepared.

It has been proven that "Pohela Boishakh" – the "Bengali New Year" – happens to be the largest and the most widely celebrated festival celebrated by Bangla speaking people all over the world.

The main dishes of pahela boishakh is "Panta bhat(overnight soaked steamed rice)", "Fried Hilsha fish" and a lot of "Bharta items". Eggplant chutney (Bharta) is one of the Traditional food of typical Bengalis.

There are many ways to cook this chutney. But I like to prepare it frying. At first, I have fried the eggplant and then used the basic steps of Bharta(chutney). Let's cook. Take LOVE from Bangladesh.

Ingredients

  • 1large sized eggplant
  • as requiredOil for frying and chutney
  • 1/2 cupchopped onions
  • 2dry whole red chilli
  • 2 teaspoonschopped coriender leafs
  • 1 pinchturmeric powder
  • as per tasteSalt

Steps

  1. 1

    Clean the eggplant wash them and cut into medium-large size. Take them in a bowl, put one pinch of turmeric powder with salt as required. Mix them and keep them aside.

    Take a frying pan and heat it on the stove. Fry the dry red chillies in oil and keep them aside.

  3. 3

    Now fry the eggplant into those oil also and let them cool. Now remove the fried eggplant skin from it and mash it. Eggplant mash is ready for chutney.

    Now take a bowl, put the fried chillies with salt and chopped onions and mash it using hand.

  5. 5

    Now mix the mashed eggplant into it and again mix it well.

  6. 6

    Bengali Eggplant Chutney is ready. Serve it with steamed rice,roti,idli or paratha. Enjoy!
