Homemade Gnocchi (Potato and Flour)

Wash the potatoes and place them in a pot with plenty of water, leaving the skins on. If the potatoes are large, cut them in half. I used white potatoes, but you can use red potatoes as well.

Once the potatoes are tender inside, drain them and let the steam escape so you can peel them. If they are well cooked, the skins will come off easily.

After peeling, mash the potatoes until smooth with no lumps.

Add the egg yolk to the mashed potatoes.

Add 1 level tablespoon of salt and 1 tablespoon of ground nutmeg, then mix everything together.

Gradually add flour to the mixture until it forms a dough that is easy to shape. Roll the dough into small cylinders and cut them into your desired size. Shape each piece by rolling it with your fingertip over the back of a fork. Meanwhile, bring a large pot of salted water with a little oil to a boil.

When the water boils, reduce the heat and add the gnocchi. Cook them gently, making sure they don't stick to the bottom of the pot. When they float to the surface, they are ready to drain and serve.
