Ingredients

  • 6Pav
  • As requiredOil, for deep frying
  • ForStuffing:
  • 2medium potatoes (approx. 200 gm), boiled
  • 1Green Chilli, finely chopped
  • 2 tablespoonsfinely chopped Coriander Leaves
  • 1/2 teaspoonRed Chilli Powder
  • 1 teaspoonCumin-Coriander Powder, optional
  • 1/4 teaspoonDry Mango Powder
  • 1 pinchGaram Masala Powder
  • to tasteSalt
  • ForOuter Coating:
  • 1 cupGram Flour (besan/chickpea flour)
  • 1 tablespoonRice Flour (or gram flour), optional
  • 1 pinchBaking Soda
  • 1/4 teaspoonRed Chilli Powder
  • (1/2 cup + 3 tablespoons)Water or as needed
  • to tasteSalt

Steps

  1. 1

    Peel boiled potatoes.
    Mash or grate them and transfer to a bowl. Add 1 finely chopped green chilli, 2 tablespoons finely chopped coriander leaves, 1/2 teaspoon red chilli powder, 1 teaspoon cumin-coriander powder, 1/4 teaspoon dry mango powder, a pinch of garam masala powder and salt.

    Mix well. Taste for the seasonings and add more if required. Stuffing masala is ready.

    Directions for Outer Coating:
    Take 1 cup gram flour, 1 tablespoon rice flour, a pinch of baking soda, 1/4 teaspoon red chilli powder and salt in a wide mouthed bowl.
    Add water as needed (approx. 1/2 cup + 3 tablespoons) and mix well to make the batter.
    Batter should not be too thick or too thin.

    Directions for vada
    firstly, take ball sized aloo mixture and dip in besan batter and coat well.
    deep fry in hot oil stirring occasionally.
    now slit the ladi pav and spread ½ tsp dry garlic chutney.
    place the prepared vada in center of pav.
    finally, press the vada pav and serve immediately.
