This rice is a family favourite passed down from my Grandmother to my Mum and on to us children. It’s a fantastic recipe to accompany any dish (and smells amazing, too!).

This rice is a family favourite passed down from my Grandmother to my Mum and on to us children. It’s a fantastic recipe to accompany any dish (and smells amazing, too!).
Steps

Dice up the onions and garlic cloves.

Heat up pan with olive oil. Add onions on low heat and cook until soft, not brown, stirring regularly. Add garlic and cook for 5 minutes.

Add in all the spices and fry for 2 minutes, while stirring.

Add rice (rinsed) and stir in.

Add stock and boiling water mixture and bring to a boil. Then reduce and simmer uncovered for 7 minutes.

Transfer to ovenproof dish if you need to. Cover with lid and place in the oven at 100 C for 20 minutes.

Fluff rice with fork and remove cardamom pods before serving.
