  • 1/3 cupoil, (divided)
  • 3 (300 gram)brinjal,, sliced
  • 2 (200 gram)potato,, peeled and sliced
  • 4 (400 gram)tomato,, chopped
  • 1 tablespoongreen chilli paste
  • 1 tablespoonginger garlic paste
  • 1 teaspoonred chilli powder, (lal mirch), or more to taste
  • 1 teaspooncumin seeds, (zeera)
  • 1/2 teaspoonmustard seeds, (rai)
  • 1/4 teaspoonblack seeds, (kaloonji)
  • 1/2 teaspoonturmeric powder, (haldi)
  • 1/4 teaspoonfenugreek seed, (methi)
  • 1 tablespooncoriander powder, (dhnaya)
  • 1/2 teaspoonblack pepper corns, (kali mirch)
  • 1/2 tablespooncoriander seeds, (sabut dhanya)
  • 1 tablespoondesiccated coconut, (sookha khopra)
  • 7-8curry leaves, (curry patta)
  • 1 teaspoonsesame seeds, (til)
  • 1/2 tablespoonfennel seeds, (sauf)
  • salt, to taste

    Wash the brinjal

    Heat oil in a pan, add onion, when turn brown add lehsan adrak paste

    Add all the spices and tomatoes
