My mom is famous for her white brinjal with potatoes recipe, the ultimate comfort food. When I want a taste of home, I whip up this dish. Punch up the flavor with extra chili powder. My guests from Punjab loved this dish when they visited us in 2020. 2020 was the year that we had the chance of cooking a lot and experimenting new recipes, but i loved to cook this recipe of my moms.
