Cooking Instructions

These ingredients are for 1.1 lbs (500 grams) of meat. If you want to make more, double the quantities.

Combine the bulgur, lamb fat, spices, and chopped onion. Mix very well and let sit for 1 hour so the bulgur absorbs the onion juice and the flavors blend.

Add the ground beef and knead the mixture for 5 minutes. You can also use a food processor to mix.

Heat a piece of charcoal and place it on the raw kofta mixture (yes, directly on the meat) to infuse a smoky flavor. Don’t worry, just put the charcoal on the meat while it’s raw to get that grilled aroma—the result is fantastic!

Shape portions of the meat mixture onto wooden skewers until all the mixture is used up.

Brush a grill rack or oven-safe rack with a little oil and place the skewers on it.

Bake in the center of the oven until cooked through and nicely browned on top. That’s it! Trust me, this is the best method I’ve tried—it tastes just like restaurant kofta, or even better. Enjoy!
