Chole Masala

Chole is been soak for 6-8 hours (overnight) while boiling take pressure cooker add soaked chole, water, salt, 2-3 clove, 1 bay leaf, 1-2 cinnamon stick, 2-3 black pepper,1 black cardamom. Close the lid and keep on high flame for 4 whistles.

Boiled chole, diced onions, diced tomatoes, chopped garlic pods, chopped ginger, chopped green chillies. Keep ready.

Take a pan/kadhai add oil, remaining whole masala, add garlic, ginger, green chillies, diced onions. Saute it till it gets transparent.

Now add diced tomatoes. Saute it till tomatoes get soft. Off the gas/ stove. Let it get cool.

Once it get cool take out the bay leaf. Take a grinder jar add all saute veggies without oil. Grind it in smooth paste. Put the remaining oil in a pan on medium flame add cumin seeds, bay leaf, asafoetida. Get crackled add the smooth paste.

Saute it for a min. Add 1/2 cup water in the jar clean it. Add this water to the sauted gravy. Let it get boil now add salt as per taste.

Now add turmeric powder, coriander powder, red chilli powder.

Add chole masala. Mix all masalas well. Add boiled chole along with whole masala.

Mix it all well. And now add remaining water and let it boil properly till will get thick gravy.

Now sprinkle chopped coriander leaves. Serve with bhature and salad. Enjoyyyyyyyyyyyy!!
