An awesome dish by Native Americans. Living off beans and rice, has been the way of life since man was created. Probably will still be here long after we have departed. There is carbs in beans, onions, and corn. There isn't no fat a lot of people use lard to add to their beans. This prevents malnutrition and malnourishment. 20% of our diet has to be fat of some type or we can die. So this is why I added olive oil and duck fat. Back in the day it was near grease, I don't have any.

Ingredients

  1. 1large corn on the cob
  2. 15 ouncescanned pinto beans
  3. 1medium onion
  4. 1 tablespoonminced garlic
  5. 2 tablespoonsduck fat
  6. 2 tablespoonsextra virgin olive oil
  7. To tastesalt
  8. To tastecayenne pepper

Cooking Instructions

  1. 1

    Dice the onion. Take the corn off the cob. Heat the oil and the duck fat. Drain the beans but keep the liquids.

  2. 2

    Add the corn, beans and onions to the pan. Sauté for 20 minutes. Add salt, and minced garlic. Sauté 12 minutes.

  3. 3

    Add the bean liquids to the mixture. Simmer 12 minutes. Serve. Add the cayenne pepper to taste. I hope you enjoy!!!!
