My mom loved preparing oven-baked stuffed chicken during this time of year, a tradition she upheld year after year. All my siblings (12 of us) would gather at my parents' house every Christmas to enjoy and spend time together as a family. Now that my parents are no longer with us, my siblings and their families, along with me, continue to gather at my parents' house and cook the stuffed chicken just as my mom did 😊.

Cooking Instructions

In a pot with a little oil, add the meat and sauté.

Once the color has changed a bit, add the mushrooms, walnuts, raisins, pine nuts, and cranberries, and keep stirring until everything is sautéed. Add salt to taste and set aside.

Meanwhile, with the chicken already deboned, season the chicken with salt and pepper inside and out.

Tie the chicken at the tail, add the stuffing inside the chicken.

Using a needle and thread, sew the chicken, and with the same thread, tie the whole chicken to prevent it from spilling (tie the legs and wings).

Rub olive oil on top.

Preheat the oven to 392°F (200°C).

Place the chicken on a baking tray and add chicken broth. Put the chicken in the oven for about 2 hours.

Every 15 minutes, baste the chicken with the same broth to prevent the skin from breaking.
