Bring carrots to a boil in a large pot of salted water. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain and transfer to a bowl.

In a small saucepan, stir together the brown sugar, butter and bourbon. Simmer, stirring, over medium heat until thickened, about 10 minutes. Pour over the carrots. Top with cracked pepper and serve.
