Ingredients

  1. 1 cupcauliflower florets
  2. 10Brussels sprouts
  3. 1 cupsliced carrots
  4. 1onion finely chopped
  5. 1 cupchopped tomatoes
  6. 1 teaspoonginger paste
  7. 1 teaspoongarlic paste
  8. 2 tablespoonyogurt
  9. to tasteSalt
  10. 1/2 teaspoonturmeric powder
  11. 1 teaspoonchilli powder
  12. 1 teaspooncoriander and cumin powder
  13. 1/2 teaspoongaram masala
  14. 2 tablespoonoil
  15. 1 teaspoonmustard seeds
  16. 1 teaspooncumin seeds
  17. leavesChopped Coriander

Steps

  1. 1

    In a steamer steam the cauliflower, carrots and Brussels sprouts. Do not over steam it as it will become mushy.
    In a food processor add onion, ginger, garlic, yogurt and onion and purée.

    In another pan add oil and heat on medium heat. Add the cumin seeds and mustard seeds. Once it starts fluttering add the purée and stir. Turn the flame to low and add the chilli powder, turmeric, cumin and coriander powder and salt.
    Mix well. Add 1/2 cup water and let it cook until the oil starts separating.

    Add the steamed cauliflower, carrots and Brussels sprouts and mix well. Add few leaves of coriander. Cover lid and cook on low heat for 2 minutes. Turn off gas and transfer in a serving dish. Enjoy with rice, roti, paratha naan etc.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.

Black are more pungent but yellow are milder. So you can use whichever you prefer
