This is definitely one of those recipes that deserves the title ‘the wonders you can make with discard’. These are pancake-like focaccine in the way they are cooked. Simple to prepare, incredibly soft, and wonderfully fragrant! I make them savory, but I think they could easily be made sweet as well.

Ingredients

  1. Sourdough discard (at least 160 grams for 2 focaccine)
  2. Toppings of your choice (I used: onion, chives, sesame seeds, salt, and pepper)

Cooking Instructions

  1. 1

When you have leftover sourdough discard, NEVER throw it away! Because you can make these wonders. Pour the discard into a hot, lightly oiled non-stick pan.

  2. 2

Season the top as you like: in this case, I added thinly sliced onion, chives, sesame seeds, salt, and pepper. But you can also use sun-dried tomatoes, cherry tomatoes, olives, oregano, basil... If I were to think of a sweet topping, I would suggest dried or dehydrated fruit and brown sugar (or maple syrup at the end).

  3. 3

Cook the seasoned side for another two minutes so that the chosen topping cooks or caramelizes.

  4. 4

And voilà: a delicious treat is ready!
