Cheesy Chorizo Rice

Ninja Foodi dinner, but would work the same with most any pressure cooker. 

What I like about this recipe is it was quick, easy, filling, inexpensive, and made a whole meal with just one pot.

This was a total experiment. I ended up just tossing together some things I'the hoped would work and figured pizza is always just a phone call away if I failed. 😂 

My husband loved this, so I made sure to record it to be able to recreate it for him. That being said, this is not by any means how a traditional chorizo dish would be prepared, and I apologize in advance to any Mexican food connoisseurs out there. You will more likely than not want to add some jalepeños and/or red pepper flakes and cayenne to turn up the heat if that's your thing. 

This should also work just fine with ground beef instead of chorizo (double the spices), Rotel tomatoes instead of Italian tomatoes (likely would work better), condensed cheddar soup or your own cheese sauce from shredded cheddar butter and milk melted together instead of the Ragu cheese sauce, black beans instead of blàckeye peas, brown rice instead of white rice. ....or just use it as a base to spark ideas for your own experiment with whatever you have on hand.

Ingredients

  • 20 ozChorizo Fresh Sausage
  • 1small Onion (diced)
  • 14.5 ozcan Italian Recipe Stewed Tomatoes (not drained)
  • 16 ozjar Ragu Double Cheddar
  • 15.25 ozcan Corn (drained)
  • 14.5 ozcan Seasoned Southern Style Blackeye Peas (rinse&drain)
  • 12 ozChicken Broth
  • 2 TspChilli Powder
  • 2 TspCumin
  • 2 TspGarlic Powder
  • 2 TspOnion Powder
  • 1 TspPaprika
  • 1 cupWhite Rice (uncooked)

Steps

  1. 1

    Drain and rinse well corn and blackeye peas in collander. Set aside in sink.

  2. 2

    Put the nanoceramic inner pot in the Foodi, no crisp & cook basket nor any racks. Turn the Foodi on and set to Saute.

  3. 3

    Slice sausages to split casing. Remove casings and discard. Put sausage in Foodi and use wooden spoon to crumble it as it cooks.

  4. 4

    When sausage is almost done cooking (about 5 minutes), add onion. Saute together two minutes.

  5. 5

    Break up the tomatoes by squeezing them through your fingers into the Foodi pot, and pour remaining juices from can in the pot. Add cheese sauce, corn, blackeye peas, broth, and spices. Stir well.

  6. 6

    Gently sprinkle rice over mixture. Using the wooden spoon, gently tap it just under the surface of the mix. You don't want it going to the bottom.

  7. 7

    Put the pressure cooker lid on the Foodi with the valve positioned to seal. Set it to high pressure for 10 minutes.

  8. 8

    Let it natural release 3 minutes when done. Then quick release the pressure valve.

  9. 9

    Stir it and let it sit warming another 5-20 minutes. The sauce will absorb more into the rice and become thicker as it sits. Serve at your desired consistency.

  10. 10

    Serve with crumbled tortilla chips, shredded cheddar, and/or sour cream.
