Another Filipino stew heavily influenced by the Spanish peasant stew "Puchero", which is also made of meat and sausage, chickpeas/beans, and vegetables. The Filipino version, however, has tomato sauce and plantain bananas giving it a slightly swee lt taste.

Ingredients

50-60 minutes
6-8 servings
  1. 1kilo pork cut into cubes
  2. 50 gcabbage (half a head) chopped
  3. 100 gpechay or bok choy with the base cut
  4. 4ripe plantain bananas sliced
  5. 4potatoes or sweet potatoes cut into quarters
  6. 6longyard beans cut in 2 inches
  7. 1big can pork and beans or chickpeas/garbanzos
  8. 2 linkschorizo (semi-cured Spanish sausage) quartered
  9. 1/2 cuptomato sauce
  10. 2 cupswater
  11. 2 tablespoonsfish sauce
  12. 4 clovesgarlic minced
  13. 1medium onion diced
  14. Cooking oil
  15. to tasteSalt and pepper

Cooking Instructions

50-60 minutes

    Heat pan and cook pork in oil for 30 minutes or until brown and tender. To lessen oil, you can also try using an air fryer to cook meat. Set aside.

    Using the same pan, add garlic until and cook light golden brown on low heat. Add onion and cook until translucent. Add potatoes and cook for about 5 minutes. Add chorizo and cook for another 5 minutes.

    Add sliced plantain bananas and water. Bring to a boil. Add pork and beans, fish sauce, tomato sauce, and cabbage. Simmer for 10 minutes.

    Add yardlong beans and pechay. Season with salt and pepper. Simmer for another 2-3 minutes. Turn off heat.

    Serve with steamed rice.
