Idli-Sambhar is one such South Indian dish and is considered as a super healthy breakfast.

Ingredients

4-6 servings
  1. For idli batter
  2. 2 cupRice(I prefer basmati rice)
  3. 1 cupSplit Urad dal
  4. 1/2 tspBaking soda
  5. to tasteSalt
  6. For sambhar
  7. 2 cupToor dal
  8. 2-3 cupwater
  9. 8-10cubed pieces lauki(bottle gourd)
  10. 1/4 cupBrinjal
  11. 1Carrot medium sized chopped in circular shape
  12. 1Radish chopped in circular shape
  13. 2Tomato chopped in circular shape
  14. 1/2 tspTurmeric powder
  15. 2 tbspTamrind water
  16. 6-8Curry leaves
  17. 1 tbspSambhar masala
  18. 1/2 tspMustard seeds
  19. 1 tbspGhee for tempering
  20. to tasteSalt

Cooking Instructions

    To make idli :-

    Wash and soak urad dal and rice separately for 4-5 hours.
    Remove excess water from the urad dal and grind it finely using less water, also remove the excess water from the rice and using less water, grind it a little thicker.

    Mix both, and prepare a thick batter, keep it in a big bowl and leave it covered for 10-12 hours.
    Add baking soda and salt to the fermented mixture. Add little water if mixture is too thick (make it like a spoon falling consistency).

    Boil water in idli maker and pour the batter into it on high flame.wait for 15-20 min and your idli is ready.

    To make sambhar:Boil 2 cups of water in pressure cooker, add turmeric powder and salt. Add toor dal.Wait for 2-3 whistles on medium flame.
    Mash properly cooked dal smooth with the help of spoon.
    Mix all vegetables,few Curry leaves,1 cup water,salt and little turmeric powder in the dal. Wait for 1-2 whistles on low flame. Once pressure is removed add sambhar masala, tamrind water and boil for 2-3 minutes. Heat ghee in pan add few Curry leaves and mustard seeds, and give tadka to the sambhar.

    Serve idlis hot with sambhar and chutney.
