This chicken is a family favourite. We often prepare a double or triple batch of the spice mixture ahead of time and store it in an airtight container. It is a spicy dish, but you can reduce the amount of cayenne pepper in the spice mixture if you prefer. The chicken is also good served on its own as chicken strips.

Ingredients

  1. 12 ouncepasta of choice
  2. 12 ounceboneless skinless chicken breast cut into 2 inch strips
  3. Spice Mixture
  4. 1 tspcayenne
  5. 1 3/4 tsponion powder
  6. 1 1/4 tspgarlic powder
  7. 1 tsppaprika
  8. 1 tspdried basil
  9. 3/4 tspdried oregano
  10. 2 1/2 Tbspunseasoned bread crumbs
  11. Sauce
  12. 2 Tspvegetable oil
  13. 1 tspcrushed garlic
  14. 3/4 cupchopped onions
  15. 3/4 cupchopped sweet green peppers
  16. 4 cupscanned or fresh tomatoes, crushed
  17. 1 1/2 tspdried basil
  18. 1 tspdried oregano
  19. 1/4 tspcayenne

Cooking Instructions

    In a small bowl, combine all ingredients for the spice mixture; then coat chicken in spice mixture.

    In a medium, non-stick skillet sprayed with vegetable spray or covered with oil, saute chicken on medium heat until cooked through (no longer pink). Set chicken aside.

    In the same skillet, heat oil; saute garlic, onions and peppers for 5 minutes or until tender. Add tomatoes, basil, oregano and cayenne. Simmer for 20 to 25 minutes.

    Prepare pasta of choice and top with chicken. Combine with sauce.

    Serve and enjoy!
