Clean the fish and cut it into bite-sized pieces. Marinate with ingredients like shallots, garlic, fish sauce, a pinch of salt, and MSG. Let it marinate for about 20 minutes to absorb the flavors. Lightly fry until golden brown.

Cut the sugarcane into pieces. Boil 1 quart of water with the sugarcane to extract the sweetness.

Once the water is sweet, remove most of the sugarcane, leaving a little behind. Add the fish to braise. Adjust the seasoning to taste. It will have the salty taste of fish sauce and the mild sweetness of sugarcane, similar to rock sugar, resulting in a rich flavor. Once the fish is well-braised, add pepper, green onions, and chili, turn off the heat, and serve on a plate with rice. Accompany with boiled vegetables.
