Medu Vada

Soak urad dal for 3-4 hours. Do not over soak.

Drain off the water. Grind urad dal fine and make thick batter using little water as required. Whisk the batter for 5 minutes till it turn light. Add ginger chilli paste, salt, hing, coriander and rice flour to the batter. Mix well.

Heat oil in a pan. wet a small cup with water, turn the cup upside down and put some batter on it and make a hole in center with wet finger.

Drop the vada in hot oil. Deep fry on medium flame till it becomes golden brown from both sides.

Serve hot medu vadas with coconut chutney and sambhar.
